He didn’t cut it off, he pointed it. If you look at the cloth it’s just a hole that the ear comes through, probably to catch all the blood.
It totally does look like it was cut off at first glance. I wondered why he pointed it if he didn’t want it anymore.
ALSO my future brother-in-law was born with his ear like that. I super hope that Joe is carrying that gene. I want elf-children.
